Crispy Zucchini Rings With Creamy Zucchini Dip
  1. Slice the zucchinis into thick rounds. Use a small bottle cap or round cutter to remove the centers and create rings. Reserve the centers for the dip.

  2. Add the zucchini rings to a large bowl and toss with olive oil, cornstarch, breadcrumbs, Parmesan, garlic powder, paprika, oregano, onion powder, salt, and black pepper until evenly coated.

  3. Arrange the rings in a single layer on a parchment-lined baking sheet. Bake at 200°C (400°F) for 20–25 minutes, or until golden and crispy.

  4. Sprinkle the hot zucchini rings with extra grated Parmesan as soon as they come out of the oven.

  5. Cook the reserved zucchini centers in 1 tablespoon olive oil until soft. Transfer to a food processor and blend with yogurt, tahini, lemon juice, garlic, parsley, salt, paprika, black pepper, and chili flakes until smooth and creamy.

  6. Enjoy the crispy zucchini rings warm with the creamy zucchini dip on the side.
