Marinate chicken by mixing all the ingredients listed in a bowl until well combined.
Add half a peeled onion to the bottom of the skewer.
Skewer the chicken, one piece at a time until firmly packed tower is formed in a crisscross way.
Marinate for ½ hour in the fridge.
Add ⅓ cup of water to the base of the tray.
Bake at 180C fan forced for approx 1 hour and 15 minutes or until cooked through.
Remove from the oven, use a sharp knife to shave the chicken into thin pieces.
Serve in a toasted gluten free souvlaki wrap or with salad.
