Gnocchi & Sweet Potato Bowls
  1. Preheat oven to 400 F.

  2. Place gnocchi & sweet potatoes in a bowl & toss with olive oil, salt, pepper, and garlic powder until well coated.

  3. Chop chicken sausage into pieces.

  4. Transfer veggies & chicken to a large sheet pan and spread into a single layer.

  5. Bake for 15 minutes, then remove & stir.

  6. Place back in oven for another 20ish minutes.

  7. Once veggies and sausage are close do done, remove from the oven and add spinach.

  8. Place back in the oven for another 5 minutes or until spinach begins to wilt.

  9. Remove and stir well until spinach is incorporated and all ingredients are well combined.

  10. Transfer to meal prep containers & top with sundried tomatoes, pine nuts, and Parmesan (or your cheese of choice).
