Preheat oven to 400 F.
Place gnocchi & sweet potatoes in a bowl & toss with olive oil, salt, pepper, and garlic powder until well coated.
Chop chicken sausage into pieces.
Transfer veggies & chicken to a large sheet pan and spread into a single layer.
Bake for 15 minutes, then remove & stir.
Place back in oven for another 20ish minutes.
Once veggies and sausage are close do done, remove from the oven and add spinach.
Place back in the oven for another 5 minutes or until spinach begins to wilt.
Remove and stir well until spinach is incorporated and all ingredients are well combined.
Transfer to meal prep containers & top with sundried tomatoes, pine nuts, and Parmesan (or your cheese of choice).
