In a medium bowl, stir together the softened butter and 2 tablespoons of powdered sugar until combined and creamed. Mix in the vanilla.
Stir in flour and salt until combined and a dough forms. Mix in the pecans.
Pop the dough into the fridge to chill for 20-30 minutes while the oven preheats. Preheat the oven to 350 degrees F.
Line a baking sheet with parchment paper. Press/roll the dough into two balls and place on the baking sheet.
Bake for 11-14 minutes - they will be set and be golden brown on the bottom. Carefully lift one to check underneath.
Allow them to cool on the baking sheet for about 5 minutes, then once cool enough to handle (but still warm), roll in the powdered sugar. Let cool and do a second roll for an extra coating of powdered sugar.
