Season beef short rib with salt and black pepper
Chop garlic cloves and finely chop shallots
Heat oil and cook shallots and garlic until fragrant
Add Massaman paste and cook for 1-2 minutes
Dust beef with plain flour and brown in the pan
Add beef stock or bone broth to the pan
Add lemongrass stalks and lime leaves
Stir in light coconut milk, fish sauce, and brown sugar
Transfer to oven and braise at 150°C (130°C fan/300°F) for 2.5 hours until beef is falling apart
Finish with lime juice
Serve over jasmine rice
Garnish with sliced spring onions, red chilli, and black sesame seeds
