Whisk together the egg yolks, oil, milk, and vanilla/almond extract.
In a separate bowl, beat the egg whites with ½ cup sugar and a pinch of salt until soft peaks form.
Combine the egg yolk mixture and egg white mixture.
Pour the batter into a 9-inch square baking pan lined with parchment paper.
Bake at 300°F with a water bath for about an hour, or until a toothpick inserted comes out clean.
