Squeeze about 2 tablespoons of lemon juice into a saucepan
Add 1 teaspoon of cinnamon
Add ½ cup of honey
Grate about 2 tablespoons of ginger through the smallest holes and add it to the pan
Bring the mixture to a boil
Once it starts to bubble, take it off the heat and whisk it around until the bubbles go away
Put the mixture back under heat and repeat the process 4 to 5 times until the mixture darkens and the moisture has evaporated
Line a pan with parchment paper
Use a small spoon to make small drops of the mixture onto the parchment paper
Sprinkle some powdered sugar on top
Let the drops cool off for about 5 minutes
