In a food processor, combine the avocado flesh, garlic clove, jalapeño, fresh herbs, lime juice, the spring onions, pistachios, lime juice, salt + pepper.
Blitz until creamy + smooth, streaming in the olive oil as you go.
Add an ice cube or two for extra creaminess + green colour.
To serve, top with pomegranate seeds, pistachios, olive oil, then serve with dipper of choice + enjoy!
