Peel potatoes (optional) or keep skin on for rustic fries.
Cut into even sticks (about ¼–½ inch thick).
Place cut fries in a bowl of cold water.
Soak for 20–30 minutes (or up to 1 hour).
Drain water completely.
Pat fries very dry using a clean towel or paper towels.
Toss fries with olive oil, salt, paprika, garlic powder, pepper.
Mix until evenly coated.
Preheat air fryer to 180°C (360°F) for 3–5 minutes.
Add fries in a single layer (don’t overcrowd—cook in batches if needed).
Cook: 15–20 minutes total
Shake basket every 5–7 minutes for even crisping
For extra crisp: increase to 200°C (390–400°F) for last 2–3 minutes.
Taste and add extra salt if needed.
Serve immediately while hot and crispy.
