Viral Crispy Rice Salad - Salmon Version
  1. Cook rice in oven at 200°C, tossing every 10 minutes for 30-40 minutes until crispy

  2. Season salmon fillets with light soy sauce, garlic powder, smoked paprika, and salt

  3. Cook salmon in air fryer for 12 minutes, flipping halfway through

  4. Mix together low fat mayo, Greek yogurt light, and sweet chilli sauce to make the sauce

  5. Prepare salad by chopping cucumber, spring onion, and coriander

  6. Assemble salad with crispy rice, cooked salmon, edamame, cucumber, avocado, and fresh herbs

  7. Drizzle sweet chilli sauce over the salad and sprinkle with bagel seasoning
