Crunchy Quinoa Salad
  1. Cook quinoa in a medium pan. Bring 2 cups of water to a boil, add quinoa, stir and cover.

  2. Reduce heat and simmer for 15 minutes.

  3. Fluff with a fork.

  4. Place peanut butter and honey in a microwavable bowl and heat for about 25 seconds.

  5. Add in ginger, soy sauce, vinegar, and oils. Stir until smooth.

  6. Add dressing to quinoa to taste.

  7. Add in remaining ingredients.

  8. Garnish with nuts.

  9. Chill or serve at room temperature.
