Stir-fried Udon With Beef Belly
  1. Whisk together soy sauce, oyster sauce, sugar, tsuyu, lemon juice, maesil cheong, and pepper. Set aside.

  2. Boil udon noodles for 2–3 minutes until tender. Rinse under cold water and gently squeeze to remove excess liquid.

  3. In same pan, cook beef in batches over medium-high heat until mostly browned. Set aside and wipe pan clean.

  4. Melt butter in the pan over medium-high heat. Add Fresno chiles, onions, and garlic; cook until fragrant, about 30 seconds.

  5. Add the beef and 2 tablespoons of the sauce, toss to coat. Turn heat to high, add noodles and remaining sauce, and toss until well combined, about 1 minute.

  6. Add garlic chives and gochugaru if using, toss once more, and serve with pickled ginger (optional).
