Blackberry Muffins
  1. Set the oven to 400 degrees and adjust the rack position to the top third of the oven. Line a 12-cup muffin tin with cup-cake liners or spray it with baking spray

  2. Sit the flour, sugar, cinnamon, and baking soda into a large howl. Put the milk in a separate bowl and stir in the egg, melted bater, and lemon zest. Pour the wet ingredients onto the dry ingredients and very gently, using a fork, stir them just until the four disappears. The muffins will be tough if you overmix the batter

  3. Stir in the herries so they're evenly distributed

  4. Fill the muffin cups three-quarters full and bake until golden broven on top, 20 to 25 minutes. Serve the muffins hot in a rupkon-lined basket with plenty of butter to spread on them,
