Fresh Citrus Salsa
  1. Cut off top and bottom from oranges.

  2. Half the red onion and finely chop until you have ⅓ cup of diced onion.

  3. Lay orange on one of the cut sides. Carefully using a sharp knife, cut away the orange peel and white pith. Quarter the orange, then cut crosswise into ¼ inch slices.

  4. Rinse the cilantro and pat dry with a paper towel. Pick cilantro leaves from stems. You'll want about a half cup of cilantro leaves.

  5. Combine orange slices, diced onion, cilantro, and chili lime seasoning in a mixing bowl. Season with salt and pepper to taste.
