Banana Walnut Granola
  1. Pre-heat the oven 150°C/ 300°F (fan-forced).

  2. Puree the very ripe bananas in a food processor or blender. If using a Thermomix 10 seconds speed 5.

  3. Add the coconut oil, sweetener of your choice, cinnamon and vanilla and blend until well combined. If using a Thermomix 1 minute speed 5.

  4. In a large oven tray, toss the oats, bukkinis, sesame seeds and walnuts together.

  5. Pour over the banana blend and toss through the dry mix until it is all coated evenly.

  6. Bake for 30-40 minutes, stirring every 10 minutes until golden and crisp.

  7. Allow to cool fully, mix in the dried banana before storing in an airtight container.

  8. Serve with your choice of milk, yoghurt and fresh fruit.

  9. Once completely cooled in an airtight container.
