Start by cutting 4–5 Persian cucumbers (or 3 Japanese cucumbers) into half moons, coins, or sticks. Whatever shape you like, just don't make them too thick -you want them to soak up all the flavor.
Add the cucumbers to a bowl or jar.
Add 1 cubed avocado, 1 finely diced large shallot (or ⅓ red onion), a large handful of finely chopped cilantro.
Add 2 tablespoons of roasted pistachios for some crunch and flavor.
Finally, top it all off with 1 oz crumbled feta, the zest and juice of 1 large juicy lime, 1 tbsp olive oil, a generous pinch of salt, and ½ to 1 tbsp chile lime seasoning.
Close the lid and give it a good shake, or just toss it gently in the bowl.
Finish with more feta and finely chopped cilantro on top.
