Bacon Wrapped Smoked Mini Meatloaf
  1. Preheat the smoker at 275 degrees. Line a baking sheet with aluminum foil and place a wire rack on top of the baking sheet. Set aside.

  2. In a large bowl, mix all ingredients except the topping ingredient.

  3. Shape into 2-inch oblong meatloaves.

  4. Wrap a piece of bacon around each mini meatloaf and place on the prepared baking sheet and rack. Secure each one with two toothpicks to keep the bacon in place.

  5. Top with barbecue sauce, and halfway through, turn each one over and spread additional barbecue sauce over the loaves.

  6. Smoke for approximately 2 hours, or until the internal temperature is 165, and the bacon is crispy.
