Preheat grill or oven to 350°
Season chicken with salt, pepper & ½ tsp lemon pepper seasoning
Drain & chop artichoke hearts
Cook spinach over medium heat in 1 tsp olive oil until wilted. Chop & set aside.
In a blender combine, cottage cheese, ¼ cup grated Parmesan cheese, garlic cloves, onion powder & ½ tsp lemon pepper seasoning. Blend until smooth.
In a large pan over medium high heat cook chicken cubes in olive oil. Cook for 2-3 minutes on each side, until mostly done through. It will continue to cook in the baking dish.
In a baking dish add in chicken, spinach & artichokes. Pour sauce on top, mix to combine. Top with mozzarella cheese & grated Parmesan.
Cover with foil and bake for 20 minutes.
