Fried crispy shallots

160 g sliced shallots

6 g Salt

    325g oil

  1. Peel and slice shallots 2mm

  2. salt in big bowl

  3. let sit for at least 1 hour

  4. pour shallots through sieve

  5. dry shallots on paper towel

  6. put shallots and oil into pan

  7. heat to 105C for 15 min, stirring occasionally. It should sizzle but no browning should occur

  8. when the shallots have shrunk a bit, increase the heat and brown them 5 to 10 min. Pay close attention

  9. pour oil through sieve into bowl, shake the sieve and dump shallots onto paper towels.
