Steamed Haricot Verts In A Lemon Thyme Vinaigrette
  1. Bring a large pot of salted water to a boil.

  2. Add the beans and boil for 3 minutes only.

  3. Drain and add to a cold water bath or simply run them under cold water to stop the cooking process.

  4. Make a lemon vinaigrette by combining one part extra-virgin olive oil with one part of fresh lemon juice.

  5. Season with salt, pepper and fresh thyme leaves.

  6. Shake well in a jar and pour as much as you want over the beans.

  7. Check for seasoning and garnish with lemon slices and lemon zest.
