Mix spice blend together in a small bowl and set aside.
Heat olive oil in a pan over medium heat. Add diced onion and sauté for about 5 minutes until softened and lightly golden.
Add corn kernels, garlic, salt, and 1 tbsp of the spice mix. Cook for another 5 minutes until corn is tender and slightly charred.
Lower heat and stir in cream cheese until melted and creamy. Mix in sour cream until fully combined.
In a small pot, melt butter. Stir in 3 tsp of the spice mix and cook on low for 1 minute. Set aside.
In a small bowl, mix mayo and lime juice to make the lime crema.
Pour corn mixture into a serving dish.
Drizzle with lime crema, then spoon over spicy butter mixture.
Top with cotija cheese, cilantro, and extra charred corn if desired.
Serve warm with tortilla chips and lime wedges.
