High-protein Chicken Tikka Masala
  1. Mix all marinade ingredients, coat chicken well, and marinate at least 4 hrs or overnight.

  2. Heat a pan over medium heat, add chicken, and cook 12-14 mins until cooked through. Remove and set aside.

  3. In the same pan, add onion and cook 3 to 5 minutes until soft and lightly golden. Add spices, then tomato paste, garlic, and ginger. Stir 1 to 2 mins.

  4. Add the broth and scrape the bottom, add tomato sauce and simmer until thickened. Lower heat.

  5. Slowly stir in yogurt and half and half on low heat, then return chicken to the pan. Cover and simmer 5-6 mins.

  6. Finish with fresh cilantro and a squeeze of lemon. Serve over protein rice, regular rice, quinoa, cauliflower rice, or high-protein naan.
