Preheat oven to 400 degrees.
On a baking sheet, combine 1 pound of fresh strawberries and half a cup of granulated sugar.
Roast in the oven for 20 to 25 minutes, or until roasted, charred, and a nice syrup forms.
Pour the roasted strawberries and syrup into a bowl and mash them up.
Take half of the mashed strawberries and set aside to cool.
Add half pound of unsalted butter to the remaining mashed strawberries.
Mix very nicely and whisk well.
Add pinch of salt and little bit lemon zest (optional).
Chill the mixture in the fridge.
