Start by generously seasoning both sides of the pork chops with salt and black pepper.
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully add the pork chops. Cook them for about 4-5 minutes on each side until they are nicely browned and fully cooked. Once done, remove the chops from the skillet and set them aside, keeping them warm.
Next, reduce the heat to medium. In the same skillet, add the minced garlic and sauté it for about 30 seconds until it’s fragrant.
In a small bowl, whisk together the Dijon mustard, honey, whole grain mustard, and chicken broth.
Pour the honey mustard sauce mixture into the skillet. Stir and let it cook for about 2-3 minutes until the sauce thickens slightly. Then, return the pork chops to the skillet, spoon some sauce over them, and cook for an additional 1-2 minutes.
Plate the pork chops and drizzle the remaining sauce from the pan over the top. Garnish with chopped fresh parsley.
