Garlic Spiced Roast Lamb
  1. Preheat the oven to 220C

  2. Score the lamb and combine the spice rub. Liberally rub over the lamb

  3. Tip the onions and garlic into the roasting tray and add the lamb on top. Pour the milk over the onions and garlic.

  4. Cover tightly with foil

  5. Turn down the temp to 170C and cook for 2 and a half hours or until very soft and tender

  6. Remove the foil and cook for another 15 minutes to reduce the liquid slightly and brown the top

  7. Serve with lots of garlic and onions. Top with the mint sauce :)
