Barbacoa

1 Cut chuck roast in 2 inch chunks. Season with salt $ pepper. Sear on high heat.

2 Place all other ingredients in the blender except bay leaf. Blend till smooth.

3 Place all beef back in pressure cooker along with the sauce and 1-2 cups of beef broth (enough to almost cover the meat). Pressure cook on medium high for 45 min or slow cook for 3-4 hours.

4 Shred beef, add broth back to the meat.
