Add sugar to a large mixing bowl
Add vegetable oil (or coconut oil or avocado oil) to the sugar
Mix together until combined
Add cocoa powder and mix well
Add all 4 eggs and mix until combined
Add vanilla extract and mix thoroughly
Scrape the sides of the bowl
In a separate medium bowl, combine flour, baking powder, and salt
Add the dry ingredients to the wet ingredients and mix together
Refrigerate the dough for at least 4 hours, ideally overnight, until stiff enough to scoop
Preheat oven to 350°F
Roll dough into balls using a cookie scoop or spoon
Roll each ball in powdered sugar (roll twice for finer cracks if desired)
Place on baking sheet lined with parchment paper or baking spray
Bake for 12-14 minutes until cookies are set
Cool on a cooling rack
