Korean Bbq Meatballs With Spicy Mayo Dip
  1. In a mixing bowl, combine the ground meat, panko, green onions, garlic, egg, soy sauce, sesame oil, ginger powder, salt, and pepper. Mix gently until just combined.

  2. Form the mixture into small, evenly sized meatballs (about 1–1.5 inches in diameter). You should get about 20–24 meatballs.

  3. Heat a drizzle of oil in a large skillet or nonstick pan over medium heat. Add the meatballs and cook for 5–7 minutes, turning occasionally, until browned on all sides and cooked through.

  4. In a small saucepan, whisk together the soy sauce, brown sugar, rice vinegar, gochujang (if using), sesame oil, garlic, and ginger. Bring to a simmer over medium heat.

  5. Stir in the cornstarch slurry and cook for 1–2 minutes, until the sauce thickens. Remove from heat and set aside.

  6. Once the meatballs are cooked, toss them in the Korean BBQ sauce until evenly coated. Simmer in the sauce for 1–2 minutes to let the flavors meld.

  7. In a small bowl, whisk together the mayonnaise, sriracha, rice vinegar, sesame oil, and a pinch of salt. Adjust the sriracha to your preferred level of spiciness.

  8. Arrange the glazed meatballs on a platter and garnish with sesame seeds and sliced green onions. Serve with the spicy mayo dip on the side.
