Heat oven to 400°F. Line a sheet pan with parchment.
Spread chips out in an even layer (slightly overlapping is fine).
Sprinkle shredded white cheddar and cubed brie and spread all over the chips.
Add salami/prosciutto evenly.
Bake 6–8 minutes until the brie is melted and chips look toasty (don’t nuke it—just melt + warm).
Spoon small dollops of jam across the nachos.
Add pickles or peppers.
Drizzle garlic aioli.
Finish with chives, cracked pepper and parmesan (optional).
Serve immediately while it’s melty and chaotic.
