Strawberry Lime Chia Yoghurt Parfaits

  1. Trim and slice the strawberries.

  2. Place them in a small pan on the stove.

  3. Squeeze in the juice of half the lime.

  4. Cook the strawberries over a moderate heat until the strawberries start to break down.

  5. As the berries are cooking, stir in the chia seeds and honey.

  6. Remove from the heat once you have a chunky puree texture.

  7. Taste test, and add extra lime juice if desired.

  8. Set aside to cool and thicken - it's best to scoop it into a bowl and pop it in the fridge.

  9. Once the puree has cooled, assemble the parfaits.

  10. Layer in the yoghurt, then the strawberry mixture, and then granola.
