Boil and smash potatoes flat into a baking pan
Season potatoes with salt, pepper, and garlic to taste
Spray pan with light cooking spray
Place potatoes in oven at 425°F until crispy, or use broil setting for a few minutes if needed
Blend 10 eggs with 1 cup cottage cheese, salt, pepper, and garlic
Brown 2 lbs lean turkey breakfast blend sausage
Add blended egg mixture, browned sausage, chopped bell peppers, and grated Parmesan on top of the potatoes
Bake at 425°F for 25-30 minutes
Garnish with green onion
Divide into 8 servings for meal prep
