Breakfast Potato Bake Casserole
  1. Boil and smash potatoes flat into a baking pan

  2. Season potatoes with salt, pepper, and garlic to taste

  3. Spray pan with light cooking spray

  4. Place potatoes in oven at 425°F until crispy, or use broil setting for a few minutes if needed

  5. Blend 10 eggs with 1 cup cottage cheese, salt, pepper, and garlic

  6. Brown 2 lbs lean turkey breakfast blend sausage

  7. Add blended egg mixture, browned sausage, chopped bell peppers, and grated Parmesan on top of the potatoes

  8. Bake at 425°F for 25-30 minutes

  9. Garnish with green onion

  10. Divide into 8 servings for meal prep
