Preheat oven to 400°F
Add 1 tbsp of avocado oil to chicken breasts and generously season both sides with salt, pepper, and seasoning mix
Heat an oven-safe skillet over medium high heat
Add 2 tbsp of avocado oil to the pan
Once oil is shimmering, add chicken and cook undisturbed for 4 minutes on each side
Transfer to oven and roast for another 7 minutes
Remove from oven and let sit for 5 minutes before slicing into bite-sized pieces
Make dressing by whisking together olive oil, vinegar, lemon juice, honey, dijon mustard, salt and pepper
Add avocado, corn, chicken, dill, and shallots to a large serving bowl and gently toss with dressing
Season with salt and pepper as needed
