Avocado Corn Chicken Salad
  1. Preheat oven to 400°F

  2. Add 1 tbsp of avocado oil to chicken breasts and generously season both sides with salt, pepper, and seasoning mix

  3. Heat an oven-safe skillet over medium high heat

  4. Add 2 tbsp of avocado oil to the pan

  5. Once oil is shimmering, add chicken and cook undisturbed for 4 minutes on each side

  6. Transfer to oven and roast for another 7 minutes

  7. Remove from oven and let sit for 5 minutes before slicing into bite-sized pieces

  8. Make dressing by whisking together olive oil, vinegar, lemon juice, honey, dijon mustard, salt and pepper

  9. Add avocado, corn, chicken, dill, and shallots to a large serving bowl and gently toss with dressing

  10. Season with salt and pepper as needed

  11. Serve and enjoy
