Combine peeled ginger, carrot, honey, miso, onions, rice wine vinegar, sesame oil and neutral oil in a blender
Blend until smooth and set aside
Finely shred your cabbage using a knife or a peeler
Place the cabbage in a bowl and pour the carrot ginger dressing over it
Add your almonds and toss until well combined
Transfer to a serving plate and garnish with scallions
Serve and enjoy
