Shoyu Ramen Broth
Heat chicken stock in a pot
Add garlic, ginger, soy sauce, mirin, and sugar
Simmer 10 minutes
Add sesame oil before serving

Miso Ramen Broth: Heat stock in a pot
Add garlic and ginger
Dissolve miso paste in the broth
Add soy sauce and chili oil
Simmer 10 minutes
Tonkotsu Ramen Broth
Tonkotsu Ramen Broth: Boil pork bones 10 minutes, discard the water
Add fresh water, garlic, ginger, and onion
Simmer 6–8 hours until broth becomes creamy and milky
Strain broth and season with salt or soy sauce
