Cauliflower Soup
  1. Warm oil in pot.

  2. Sweat onion over low heat in oil for about 10 minutes.

  3. Add cauliflower, salt and ½ cup water.

  4. Raise heat slighty, cover and stew for 15-18 minutes.

  5. Add 4 ½ cups broth and simmer uncovered for 20 minutes.

  6. Puree and let stand for 20 minutes.

  7. If needed, thin with ½ cup hot water and reheat.

  8. Season with cracked pepper, red pepper and a drizzle of oilve oil to taste.

  9. Enjoy!
