Warm oil in pot.
Sweat onion over low heat in oil for about 10 minutes.
Add cauliflower, salt and ½ cup water.
Raise heat slighty, cover and stew for 15-18 minutes.
Add 4 ½ cups broth and simmer uncovered for 20 minutes.
Puree and let stand for 20 minutes.
If needed, thin with ½ cup hot water and reheat.
Season with cracked pepper, red pepper and a drizzle of oilve oil to taste.
