Black Soybean Hummus

8 net carbs in the whole recipe

Ingredients:

1 cup of cooked black soybeans or 1 cup canned black soybeans non GMO, organic

1 Tbsp tahini paste

1-2 cloves fresh garlic made into a paste

1 Tbsp EVOO

1 - 1 ½ tsp fresh lemon juice or a wedge to taste

A half piece soft roasted red pepper from the jar (3”x2”)

1 Tbsp full fat sour cream

1 TBSP mayonnaise

¼ tsp cayenne pepper to taste

¼ tsp cumin

Salt to taste

Leftover black soybean juice to thin out hummus if needed

Directions:

Add all ingredients to a food processor and blend until silky smooth, scraping down the sides as you blend.

Adjust consistency with a little black soybean liquid or water until very creamy.

Scoop hummus into an onion soup bowl and make a small well in the hummus.

Pour 1 Tbsp of EVOO into the well and sprinkle a little cayenne pepper and salt over the surface to taste.
