Slice the chicken breasts horizontally into thin cutlets or pound them to an even thickness. Season both sides with salt and pepper for a flavorful base.
Lightly coat each piece in flour, shaking off any excess. This helps create a light crust and also thickens the sauce later.
Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chicken and cook for 3–4 minutes per side until golden brown and cooked through. Remove and set aside.
In the same pan, add minced garlic and cook for about 30 seconds until fragrant. Be careful not to burn it.
Pour in the chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan. This step adds depth and flavor to the sauce.
Stir in the capers and let the sauce simmer for 3–5 minutes until slightly reduced.
Add the remaining butter and stir until melted and the sauce becomes smooth and slightly thickened.
Place the chicken back into the skillet, spooning the sauce over the top. Let it cook for another 2–3 minutes to absorb the flavors.
Sprinkle fresh parsley over the top and serve immediately with extra sauce.
