  1. Grate lemon zest into sugar and rub together to release oils

  2. Combine butter, oil, and vanilla and mix until well combined

  3. Add lemon sugar and whip on high speed until mixture turns pearly white

  4. Add eggs one at a time, mixing between each addition

  5. Add lemon extract, vanilla extract, buttermilk, flour, baking powder, and salt

  6. Fold in poppy seeds and add a hint of yellow food coloring

  7. Bake cakes

  8. Make cream cheese frosting

  9. Assemble cake, adding lemon curd between layers after chilling for 30 minutes
