Line sheet pan with parchment and make sure there's a space in your freezer where it fits. Add 5 graham cracker sheets to the pan with the sides touching.
Microwave chocolate chips and coconut oil in 30 second intervals, stirring in between, until melted (I usually need 60 seconds total). Pour and spread evenly on top of the graham crackers, then place in the freezer to set.
Meanwhile, add protein powder and pbfit to the cool whip and stir until smooth. Spread evenly onto the hardened chocolate layer and top with remaining graham crackers, leaving a tiny space in between to help with cutting.
Freeze at least 1 hour before cutting into bars and enjoy!
