Preheat oven to 350°F (175°C). Line or grease muffin tin.
Combine cottage cheese, egg, sweetener, vanilla, and spices in blender until smooth.
Stir in almond flour and grated carrot until even.
Divide among six cups, add toppings, bake 20–25 minutes.
Cool 10 minutes before serving. Enjoy warm or chilled.
