Easy leftover dairy pasta bake

Ingredients

    8–10 oz pasta (penne or ziti works well)

    Instructions

  1. Boil pasta until just al dente and drain.

  2. In a bowl, combine cottage cheese, ricotta, egg (if using), and few herbs with salt and pepper.

  3. Mix the drained pasta and cheese mixture. Spread half into a greased baking dish.

  4. Top with half of the marinara sauce and half the mozzarella log pieces.

  5. Add remaining pasta and sauce. Lay the rest of the mozzarella on top, and sprinkle with Parmesan if desired.

  6. Bake at 375°F for about 20–30 minutes, until bubbly and golden

  7. Let rest for 10 minutes before slicing.
