Buffalo Mac'n'cheese
  1. Cook protein macaroni in salted water according to package instructions, drain

  2. Heat olive oil in a pan and fry tofu 5–6 min until golden and crispy

  3. Mix hot sauce, maple syrup, garlic powder, salt & pepper and toss with the tofu

  4. Blend silken tofu, soy milk, cashews, nutritional yeast, garlic powder, onion powder, turmeric, salt & pepper until smooth

  5. Pour cheese sauce into a pan and heat gently for 2–3 min

  6. Add cooked macaroni and toss until creamy and coated

  7. Fold in buffalo tofu

  8. Transfer to a bowl and top with grated vegan cheese

  9. Finish with spring onion and extra hot sauce if desired
