Caesar Salad
  1. Make the Caesar Dressing: Mince the anchovy filets and grate the garlic. In a bowl, whisk together the egg yolks, Dijon mustard, Worcestershire sauce, lemon zest and juice. Slowly drizzle in the olive oil while whisking constantly to emulsify. Stir in the grated Parmigiano Reggiano and season with salt and pepper to taste.

  2. Make the Breadcrumb Topping: In a skillet, melt the butter over medium heat. Add the panko breadcrumbs and garlic and cook, stirring frequently, until golden brown, about 3-5 minutes. Remove from heat and stir in the lemon zest. Season with salt and pepper.

  3. Prepare the Greens: Rinse the lettuce leaves and soak in ice water for 30 minutes to crisp up. Drain and pat dry.
