In a blender, combine the cucumbers, lime juice, honey, jalapeño, salt, mint and water. Blend until smooth. Taste and add more honey if preferred.
Pour the mixture in a freezer-safe container and freeze until completely solid, about 6 hours, preferably overnight.
Right before serving, using a fork, scrape the surface of the frozen granita block. Scoop the mixture into chilled serving cups and top with more honey and lime juice.
