Mix 150 gms minced chicken with 1 medium finely chopped onion, fresh coriander, grated ginger, garlic powder or minced garlic, salt to taste, black pepper, light soy sauce, and paprika/chilli flakes.
Dunk rice paper in water for 15 seconds and place the filling in the middle.
Roll as shown into spring rolls and cut them into bite sized pieces.
Preheat the air fryer for 5 min at 180.
Air fry with a spray of oil for 15-20 min at 180-190 degrees.
Drizzle some chilli oil or hot sauce and dive in.
You can also add 1 egg to the mixture if it becomes a lil dry.
