Place your stick blender over the egg ensuring the blades touch the egg itself
Pour the oil into the jug
Hold the stick blender down and start blending at high speed, waiting for the emulsion to occur
Once emulsion starts, slowly lift the blender slightly to incorporate more oil
Once the mayonnaise is thick and well emulsified with some oil remaining, pull the immersion blender up and down to incorporate the rest of the oil
Adjust seasoning to your taste preference
