Creamy Vodka Pasta
  1. Heat a skillet over medium heat. Add olive oil and 1 tbsp butter.

  2. Add shallots, salt, and red chile flakes. Cook for a few minutes.

  3. Add garlic and cook until fragrant.

  4. Add tomato paste in the middle of the pan and cook for a few minutes.

  5. Cook the pasta while preparing the sauce.

  6. Bring the tomato paste, shallot, and garlic together.

  7. Add the vodka and cook until the vodka smell is gone, a few minutes.

  8. Add the heavy cream and cook for a few minutes.

  9. Season with salt and pepper.

  10. Add the parsley and basil and whisk to combine.

  11. Add the cooked pasta and 1 tbsp butter, and bring everything together.

  12. Add pasta water as needed to reach the desired consistency.

  13. Top with Parmesan cheese and parsley.
