Add eggs, sugar, ¾ tsp cinnamon, and ginger to a large bowl and whisk either by hand or with an electric mixer until frothy.
Add vegetable oil, vanilla extract, milk, and yogurt. Whisk until lump-free.
In a separate bowl, combine flour and baking powder. Add this mixture to the wet ingredients and whisk until lump-free.
Then grate in one large apple and mix once more.
Grease a 9-inch nonstick frying pan with butter. Sprinkle brown sugar over the pan and use a spoon to spread it.
Place the apple slices on top of the brown sugar as shown and sprinkle with ¼ teaspoon of cinnamon.
Pour batter over the apples, cover, and cook on low heat for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
On a scale from 1 to 10, the heat level should be at 4 or 4 ½.
Serve warm with whipped cream or ice cream.
