In the same skillet, cook the onion until softened, about 3-4 minutes. Add sauerkraut, sliced apples, brown sugar, and caraway seeds, stirring to combine.
Nestle the pork chops into the sauerkraut mixture. Cover the skillet and bake in a preheated oven at 350°F (175°C) for 45-55 minutes, until the pork chops are cooked through and tender.
Garnish with fresh parsley if desired and serve warm.
