Preheat oven to broil on high.
Combine pasta, milk, water, salt, garlic powder, dried thyme, smoked paprika, mustard powder, nutmeg, and black pepper in a large ovenproof pot.
Simmer over medium-high heat, then reduce to medium and cook for 8 to 10 minutes until pasta is cooked.
Stir in canned pumpkin or butternut squash purée, Cheddar, and Gouda cheese.
Adjust seasonings to taste.
Sprinkle breadcrumbs and additional Cheddar over top.
Broil for 2 to 5 minutes until golden brown and cheese has melted.
